SUMMARY:
The Executive Chef is responsible for food service employees' culinary, health, and safety training. The executive chef will inspire consistency and quality assurance through training and mentoring of food service staff assigned to school sites. The executive chef will collaborate with Cafeteria Managers to develop and design recipes, menus, production standards, cooking processes, methods, food storage, preparation, transport, and delivery procedures in compliance with the National School Lunch Program. The Executive Chef will serve to lead all catering services and provide friendly, responsive service in a clean and safe environment that all our customers will enjoy.
 
ESSENTIAL FUNCTIONS
 
1. Develops, tests, and monitors innovative recipes and menus to reflect culinary trends, aligns with National School Lunch Program guidelines, and utilizes USDA commodities and purchased products efficiently.
2. Oversees kitchen production and food quality at school sites, ensuring adherence to food safety, HACCP standards, and recipe standardization. Provides technical guidance on production and portion control.
3. Implements and monitors measures to minimize food costs, including meal production forecasting, ordering, inventory controls, and waste reduction.
4. Trains, mentors, and coaches food service staff and supervisors through workshops, hands-on instruction, and classroom sessions. Focuses on professional culinary preparation, compliance, and performance improvement.
5. Engages students for feedback on menu development, collaborates with youth advisory committees, and acts as a liaison to promote student involvement in food service decisions.
6. Plans, organizes, and supports district and board events, including cooking demonstrations, catering, and media events, while coordinating menu planning and event logistics.
7. Interprets and applies USDA, Arizona Department of Education, and federal policies for school meal programs, ensuring compliance with nutritional and operational requirements.
8. Develops and delivers food safety training, monitors adherence to sanitation standards, and oversees compliance with health regulations in commercial food production.
9. Works closely with nutrition supervisors and cafeteria managers to implement department goals, evaluates performance, and provides operational support at school sites.
10. Conducts workshops and training on topics such as meal preparation, production planning, food presentation, and school meal program guidelines.
11. Evaluates and manages equipment needs for commercial food production while maintaining proficiency in menu software, production planning tools, and Microsoft applications.
12. Maintains open communication with staff, students, and the community, fostering a positive environment and supporting district goals.
13. Prepares, maintains, and reviews records and reports; supervises employees; and ensures timely submission of required documentation. Evaluates employees using district approved evaluation tool.
14. Attends industry conferences and workshops to stay updated on culinary and school food service trends, maintaining professional networks.

REQUIRED QUALIFICATIONS  
Education, Training, and Experience Guidelines:
 
• A high school diploma/GED or equivalent and training in culinary arts are required. Culinary Arts degree strongly preferred; AND a minimum of five (5) years’ experience required as a commercial chef in a high volume restaurant, hotel, hospital food service, or school nutrition program and/or management experience with large-scale central production or commissary kitchens.
• Supervisory experience; OR an equivalent combination of education, training, and experience.
• Bilingual preferred    
License and Certification Requirements:
• Must possess a valid Arizona Department of Public Safety IVP Fingerprint clearance card within 90 days of employment.
• Must possess a ServSafe Manager's Certification within 30 days of hire.
• Must possess a Maricopa County Food Handler's Card at the time of hire.
• Possess a valid Arizona State Driver’s License.

SUMMARY:
Together with the Food Services Department, ensures that all cafeteria employees, students, and staff follow the National School Lunch Program and School Breakfast regulations through high school menu development, nutrition education, and supervision of the cafeteria managers.
 
ESSENTIAL FUNCTIONS
 
1. Train high school cafeteria managers on regulatory compliance and data management processes.
2. Conduct internal audits to monitor compliance and work with site teams to implement corrective actions. Oversee district food service audits.
3. Oversee district-wide adherence to National School Lunch Program (NSLP) and School Breakfast Program (SBP) regulations.
4. Collaborate with the district chef and director to create nutritionally balanced, student-friendly menu options.
5. Analyze and develop high school menus to meet regulatory nutritional requirements while ensuring variety, appeal, and student interest.
6. Work with the district chef to test and implement new recipes for better food quality, student satisfaction, and efficiency.
7. Assist in planning and managing cafeteria renovations or remodels to enhance service efficiency.
8. Implement and oversee technology solutions that improve operations, student engagement, and meal service effectiveness.
9. Monitor and maintain food and supply inventory at the Central Warehouse, including tracking reorder points and quantities.
10. Manage the USDA commodity food program by distributing entitlement funds and placing monthly food orders for direct shipments.
11. Oversee food services budgets, analyze department participation data, and provide strategic recommendations to support financial sustainability.
12. Prepare and submit monthly profit/loss reports, tracking food, supply, and operational costs.
13. Evaluate menu and recipe costs, reporting their financial impact on the department’s budget.
14. Meet regularly with vendors and manufacturers to explore new food and supply options that enhance school meal offerings.
15. Collaborate with local food distributors to ensure product availability by providing accurate forecasting and usage data.
16. Evaluate food service staff performance.
17. Assist in staff training and professional development initiatives to maintain high operational standards.

REQUIRED QUALIFICATIONS
 
Education, Training, and Experience Guidelines:
• Bachelor’s degree.
• Minimum of five years of supervisory experience in the food services industry.
• Strong background in Microsoft Applications, point of sale systems, inventory/accounting systems, and nutri-slice.
• Possess or ability to obtain Food Manager’s Certification.
• Must be able to pass a fingerprint and background check.
• May be required to work outside normal working hours.

1. Prepares items for breakfast and lunch services.
2. Assists with cooking menu items for meals. Wraps and pre-plates appropriate food items.
3. Records food, refrigerator, and freezer temperatures.
4. Sets-up steam tables; organizes food service lines, milk station, and snack bar.
5. Checks student ID’s for lunches. Works as a cashier at the snack bar as needed.
6. Records the snack bar product inventory after lunch service.
7. Cleans and sanitizes lunch tables, dishes, utensils, and work surfaces.
